Turkish Style Sesame Bread

- 500 grams Pastry flour
- 1 cube fresh Yeast (42 grams or approximately 1 1/2 ounce)
- 280 milliliters milk
- 25 grams sugar
- 1 pinch salt
- 25 grams butter
- 40 grams Tahini
- 3 Tbsps honey
- 2 Tbsps Sesame seeds

Preparation steps
Pour the flour into a bowl and make a well in the center. Crumble the yeast into the well and mix with 4 tablespoons of lukewarm milk. Cover and let rise for about 30 minutes in a warm place. Stir in the rest of the lukewarm milk, sugar, salt and butter and knead thoroughly with the dough hook of an electric hand mixer to form a shiny dough. Cover and let rise another 30 minutes. Knead on a floured surface by hand, then roll out into a rectangle, about 60 x 20 cm (approximately 24 x 8 inches). Brush with tahini and drizzle with honey. Sprinkle with sesame seeds and roll lengthwise, then roll into a snail-like shape.
Soak a clay pot in water, pat dry and coat with butter and sprinkle with sesame seeds.
Place the dough into the pot, cover and let rise again for about 30 minutes. Brush with warm milk and place the pot in a cold oven. Set the heat to 220°C (approximately 425°F) and bake for about 1 hour. Remove from the oven, brush with melted butter and let cool slightly. Remove from the pot and let cool on a wire rack. Slice and serve.
