Preparation steps

Bring 600 ml (approximately 2.5 cups) of water to a boil, pour 200 ml (approximately 3/4 cup) over the tea leaves, infuse 1 minute then strain through a sieve. Return the tea leaves into the pot, pour in the remaining water, let stand for 5 minutes, then strain into a mixing bowl. Stir in the sugar, lime juice and ginger until the sugar is dissolved.

Let cool and refrigerate 2 hours. Pour into an ice cream machine and freeze 20 minutes, or pour into a metal tray and freeze at least 4 hours, stirring every 20 minutes. Serve in glasses.
