Nutritional values
Strawberries are rich in secondary plant substances, among other things, they contain aromatic substances that can have a cancer-preventing effect. Making the jam with agar-agar saves a lot of added sugar - but this also means that this fruit spread does not keep as long as conventional jam.
In principle, you can make this jam with agar-agar with any fruit. We recommend berry fruits such as blueberries or raspberries as an alternative. They are relatively low in sugar and convince with great taste.

Preparation steps
Mash or puree strawberries and mix with honey. Bring to the boil in a saucepan while stirring. If necessary, add a little water so that nothing burns. Then boil for 5 minutes until bubbling. Dissolve the agar-agar in 3 Tablespoons water and the lemon juice and stir in, bring to a boil again.
Pour the jam into well-cleaned, hot-rinsed screw-top jars and immediately turn upside down to allow air to escape. Let stand undisturbed until completely cooled.
