Preparation steps

Mash or puree strawberries and mix with honey. Bring to the boil in a saucepan while stirring. If necessary, add a little water so that nothing burns. Then boil for 5 minutes until bubbling. Dissolve the agar-agar in 3 Tablespoons water and the lemon juice and stir in, bring to a boil again.

Pour the jam into well-cleaned, hot-rinsed screw-top jars and immediately turn upside down to allow air to escape. Let stand undisturbed until completely cooled.
