Ingredients

- 275 grams Puff pastry dough (frozen)
- butter (for the ramekins)
- 300 grams fresh Spinach
- 1 onion
- 2 garlic cloves
- 1 Tbsp butter
- Nutmeg (freshly grated)
- salt
- freshly ground peppers
- 80 grams Sour cream
- 150 grams Goat cheese
- 1 egg
- Edible flowers for garnishing (z. B. White nasturtium, yellow pansies)
Preparation steps
Thaw puff pastry. Butter two little tart pans (each about 18 cm in diameter) (approximately 7 inches). Roll out puff pastry and line pans with it, making an edge all around. Prick with a fork several times.
Rinse and spin dry spinach, remove hard stalks. Peel onion and garlic and dice finely. Heat butter in a pan and saute onion and garlic until soft, add spinach and saute until almost liquid has evaporated. Season with nutmeg, salt and pepper. Season sour cream with salt and pepper and mix with cheese until smooth. Spread sour cream mixture in tartlets and top with spinach mixture. Slice cheese and place on top of spinach. Beat egg and brush dough crust with it. Bake in preheated oven at 200°C (approximately 400°F) for about 15-20 minutes or until golden brown. Remove from oven.
Garnish with pansies, if desired, and serve hot or cool.
