Ingredients

For the pastry
125 grams Pastry flour
1 pinch salt
4 Tbsps olive oil
1 Tbsp Whipped cream
1 egg white
For the filling
1 Tbsp olive oil
3 onions (finely chopped)
salt
freshly ground peppers
4 small Goat cheese (sliced)
1 egg
1 egg white
150 milliliters Whipped cream
250 grams Cherry tomatoes
1 Tbsp Basil (finely chopped)

4 small Tartlet pans

Preparation steps

1.

For the pastry: Combine all pastry ingredients in a bowl and knead well, wrap in foil and refrigerate for 30 minutes.

Butter tartlet pans.

Roll out pastry on a floured surface until about 2 mm thin (approximately 1/7 inch) and cut into 4 circles. Line pans with it, making edges all around. Prick with a fork several times and bake in preheated oven at 170°C (approximately 350°F) for about 10 minutes. Remove from the oven and cool.

For the filling: Heat oil in a pan and saute onions until translucent. Spread onions and cheese slices in the pastry shells.

Beat egg white until stiff. Whisk egg with cream, fold in egg white and  season with salt and pepper. Pour cream into tartlets and smooth.

6.

Bake in preheated oven at 180°C (approximately 350°F) for about 12 minutes or until lightly browned.

7.

Halve cherry tomatoes, season wit salt and pepper and sprinkle with basil.

8.

Arrange goat cheese tartlets with cherry tomatoes on plates and serve.
