Onion Tartlets with Goat Cheese

1 Puff pastry dough (refrigerated)
28 shallots (About 7 per ramekin)
4 Tbsps sugar (brown)
4 tsps butter
4 slices Goat cheese
1 Tbsp vegetable oil
Pumpkin seed oil (for garnishing)
balsamic vinegar (for drizzling)

Preparation steps

Peel shallots and cut off stems.

Butter 4 ramekins with butter and sprinkle with sugar. Arrange shallots tightly on the bottom of ramekins.

Divide pastry into 4 parts, roll out into circles about 2-3 cm larger in diameter (approximately 1inch) than ramekins. Tear remaining pastry into small parts and stick between shallots. Cover shallots with pastry circles and push the edges inside. Bake in preheated oven at 200°C (approximatley 400°F) for about 40-45 minutes. If tartlets brown too quickly, cover with aluminum foil.

5-10 minutes before the end of baking, heat oil in a pan and toast cheese slices until golden brown on medium heat.

Remove tartlets from oven, invert onto plates and top with cheese slices.

Drizzle plates with oil and vinegar and serve immediately.
