1 kilogram waxy potatoes

1 shallot
2 garlic cloves
250 grams Chorizo
6 Tbsps olive oil
2 Tbsps chopped Fresh herbs (such as parsley, thyme, oregano, rosemary)
½ tsp Chili powder
freshly ground peppers

Preparation steps

1.

Rinse potatoes and cook in salted boiling water, about 25 minutes. Drain and let cool. Remove skins and cut into large pieces.

2.

Peel and finely chop shallot. Peel and slice garlic. Peel and slice chorizo sausage.

3.

In a large pan, fry shallots and garlic in hot oil until lightly browned, 3-4 minutes. Add potatoes, chorizo and herbs and cook, turning occasionally, 5-8 minutes more. Season with salt, chili powder and pepper.
