- 150 grams dried black Beans
- 200 grams Chorizo
- 400 grams starchy potatoes
- 1 green Bell pepper
- 2 onions
- 2 garlic cloves
- 2 Red chili peppers
- ½ tsp dried thyme
- 2 Tbsps olive oil
- 250 milliliters Beef broth
- 100 grams diced Tomatoes (canned)
- salt
- 2 Tbsps chopped fresh parsley

Preparation steps
1.
Soak the beans overnight and then rinse and drain.
2.
Slice the chorizo. Peel the potatoes and cut into quarters. Rinse the peppers, cut in half, remove the seeds and dice small. Peel and finely chop the onions and garlic.
3.
Rinse and halve the chile peppers and sauté with the onions, garlic, sausage and thyme in hot oil. Pour in the broth, add the tomatoes and beans, season with a little salt, cover and simmer about 30 minutes, stirring occasionally.
4.
Mix in the potatoes and pepper cubes and simmer 30 more minutes. Stir in the parsley, season with salt and serve.
