For the dough
1.333 cups Dark chocolate (60 % cocoa solids, chopped)
½ cup butter
1 ⅔ cups all-purpose flour
2 tsps Corn starch
3 tsps Baking powder
3 Tbsps cocoa powder
1 pinch salt
cup milk
1 egg
½ cup Sour cream (10 % fat content)
½ cup sugar
1 red chili pepper (seeds removed, very finely chopped)
To decorate
Chili powder (or cayenne pepper)
small red chili peppers (optional)

1 Cutting board, 1 Small knife, 1 deep bowl, 1 Immersion blender, 2 Teaspoons, 1 Paper towel

Preparation steps

Heat the oven to 180C (160C fan) 375F, gas 5.

Place 12 paper baking cups in the muffin pan. Place about a quarter of the chocolate in a bowl with the butter and melt over a saucepan of simmering water.

Thoroughly mix the flour, cornflour, baking powder, cocoa powder and salt in a large bowl. In another bowl, beat the milk with the egg, sour cream and sugar. Stir the melted chocolate, the chopped chilli and the remaining chopped chocolate into the egg mixture and add everything to the flour. Beat quickly until the dry ingredients are moist. Spoon the dough into the paper cups.

Bake on the middle shelf for 20-25 minutes. Test using a wooden toothpick: if it comes out clean, the muffins are done. Cool on a wire rack.
5.
To serve: dust with a little chilli powder. The muffins may be decorated with chile peppers.
