2 cups canned black beans (drained and rinsed)
1 cup Corn kernel
½ cup diced, red peppers
3 Tbsps freshly squeezed Lime juice
2 Tbsps minced, fresh cilantro
¼ tsp red Hot Pepper Sauce (or to taste)
4 boneless, skinless Chicken breasts
2 Tbsps Chili powder
Oil (for grill grate)
4 low-fat Flour tortillas (10-inch)
Romaine Lettuce

Preparation steps

1.
In a medium bowl, combine beans, corn, bell pepper, lime juice, cilantro, and hot pepper sauce. Set aside.
2.
Rinse the chicken under cold running water and pat dry with absorbent paper towels. Coat chicken with chili powder.

Prepare grill for direct grilling. Preheat to medium heat. Oil grill grate and cook chicken on oiled grill for 5 to 6 minutes per side, or until cooked through and no longer pink.

Remove chicken from grill and cut into thin slices.

Wrap tortillas in plastic wrap and microwave on High for 1 minute or until heated through.
6.
For each sandwich, place lettuce down the center of each tortilla. Top with sliced chicken and bean mixture.
7.
Roll up tightly and cut in half. Serve.
