2 Tbsps Nut oil
4 ½ cups Lamb shoulder (boned and trimmed)
2 white onions (sliced)
2 red peppers (sliced)
4 small garlic cloves (crushed)
2 tsps Curry powder
1 tsp ground paprika

Preparation steps

1.
Pour the cream into a pan and gently heat. Do not let it boil. Season with salt and pepper.

Heat the oil in a heavy based frying pan. Add the lamb and cook over a high heat to seal and brown.
3.
Preheat the oven to 200°C | 400F | gas 6. Cut four greaseproof paper squares.
4.
Divide the meat, onions, red pepper slices, and crushed garlic between the greaseproof paper squares.
5.
Spoon over the cream, paprika and curry powder.
6.
Crease and fold the greaseproof paper to enclose the ingredients and place on a large baking tray with sides.
7.
Bake in the oven for 20-25 minutes until cooked. Serve with a green vegetable or ratatouille.
