Preparation steps

1.
Preheat the oven to 200°C | 400F | gas 6.
2.
Place all the vegetables in a roasting tin and toss with oil and seasoning. Roast in the oven for about 25-30 minutes until tender and starting to blacken slightly.
3.
Meanwhile cook the penne in boiling salted water according to packet instructions. Drain and keep warm.
4.
When the vegetables are cooked, tip with all their juices into a pan and add the pasta. Toss thoroughly. Serve with parmesan and basil leaves.
