150 grams mixed Lettuce (such as Oak Leaf, arugula, frisee)
200 grams Cherry tomatoes
2 sprigs parsley
2 sprigs Dill
100 grams breadcrumbs
2 Tbsps lemon juice
2 Tbsps olive oil
4 Salmon (about 130 grams)
salt
freshly ground peppers
2 Tbsps vegetable oil
to garnish
1 lemon (wedges)

Preparation steps

Preheat the oven to 200°C (approximately 400°F).

Rinse the lettuce, trim and spin dry. Rinse the tomatoes, drain and place on a parchment paper-lined baking sheet. Rinse the parsley and dill, shake dry, chop leaves finely and mix with the breadcrumbs, lemon juice and olive oil. Rinse the salmon fillets, pat dry, season with salt and pepper and sear in a hot pan with oil on each side 2-3 minutes, Remove from pan and place with the tomatoes on the baking sheet. Spread the crumb mixture on the salmon and bake  in the preheated oven until the crumbs crust is golden brown, 7-10 minutes. Arrange the fish with the tomatoes and lettuce on a platter and serve garnished with lemon wedges.
