- 1 Salmon (28 oz, ready to cook, skinless)
- 3 organic Limes
- 2 handfuls mixed Fresh herbs (such as, basil, cilantro and watercress-red and green)
- Sea salt

Preparation steps
1.
Preheat the oven to 400ºF.

Rinse the salmon and pat dry. Squeeze the juice from 1 lime and cut the remaining limes into thin slices. Rinse the herbs, shake dry and pluck from their stems.
3.
Place the lime slices on a large piece of parchment paper and shower with half the herbs. Season the salmon with salt and drizzle with the lime juice. Place on the lime-herb bed and carefully fold and close the paper tightly.
Cook on a baking sheet for about 30 minutes.
4.
Remove from the oven, unwrap and serve garnished with the remaining fresh herbs.
5.
Suggestion: Serve with tartar sauce.
