Preparation steps
1.
For the rolls, lay a long piece of plastic wrap on the work surface. Arrange the salmon slices in a large rectangle, about 36 x10 cm (approximately 14 x 4 inches).
2.
Rinse the daikon cress, shake dry and spread uniformly lengthwise on the salmon. Roll the salmon using the plastic wrap to compress the roll tightly.
3.
For the garnish, pour the sour cream in a freezer bag and cut a small corner.
4.
Pipe rice crackers with small dabs of sour cream, cut the salmon roll into 10-12 pieces and top each cracker with a piece.
5.
Rinse the tomatoes and cut them into fine strips with a sharp knife.
6.
Arrange on the rolls, top each with a dollop of sour cream and serve garnished with watercress.
