- 150 grams Red Onion
- 5 tablespoons Balsamic vinegar
- 5 tablespoons clear Broth
- 250 grams mixed lettuce
- 1 bunch Scallions
- 150 grams Fresh mozzarella
- 1 bunch Basil
- 2 tablespoons White vinegar
- Salt and freshly ground pepper
- 1 pinch Sugar
- 4 tablespoons Olive oil
Peel onions and cut into wedges. Combine balsamic vinegar and broth in a pot. Add onions and simmer for 5 minutes.
Rinse lettuce, pluck apart into bite-sized pieces and spin dry. Rinse and finely chop scallions. Cut mozzarella into pieces. Rinse basil, pluck the leaves from the stems and shake dry.
Mix together the vinegar, salt, pepper, sugar and olive oil. Mix the lettuce with the onions, mozzarella and basil, distribute on plates and drizzle with the dressing.
