Preparation steps

Cook the spaghetti in boiling salted water until al dente, then drain thoroughly. Rinse and trim the beans, then cut in half. Blanch the beans for 8 minutes in boiling salted water, then transfer to an ice water bath and drain well. Peel the carrots and blanch for 2-3 minutes in boiling salted water. Remove from the water and drain. Rinse the broccoli and separate into florets. Blanch the broccoli for 3 minutes in boiling salted water. Transfer to an ice water bath, then drain well.

Preheat a convection oven to 180°C (approximately 350°F).

Clean and slice the mushrooms. Melt the butter in an ovenproof pan, and sauté the mushrooms until lightly browned. Season to taste with salt and pepper. Add the blanched vegetables and the spaghetti to the pan.  Sprinkle with the mozzarella and the fried onions. Place in the oven and bake for 20 minutes, until golden brown.
