- 2 Goat cheese (each about 80 grams)
- 2 Endive
- 1 handful lamb's lettuce
- 1 pomegranate
- 2 Tbsps Caper
- 1 Tbsp raisins
- 2 Tbsps lemon juice
- 2 Tbsps apple cider vinegar
- 1 tsp honey
- 3 tsps olive oil
- Iodized salt
- cayenne pepper
- 40 grams Pine nuts (toasted)
- Baguette (whole wheat)
Preparation steps
Rinse and slice endives.
Rinse and spin dry lettuce. Arrange lettuce and endives decoratively on plates.
Halve pomegranate and take out seeds. Combine with capers, raisins, lemon juice, vinegar and honey and let stand for about 10 minutes. Add oil and season with salt and cayenne pepper.
Arrange cheese on salad and drizzle with vinaigrette.
Sprinkle with pine nuts and serve with whole wheat baguette.
