1 handful fresh Fresh herbs (Lemon balm, basil and marjoram)
1 garlic clove (peeled)
6 Tbsps olive oil
½ organic lemon (zested and juiced)
salt
1 yellow Bell pepper
2 Zucchini
peppers
4 slices Goat cheese (each 40 grams)

Preparation steps

Rinse the herbs, shake dry, pluck leaves and puree the leaves along with the peeled clove of garlic and 4-5 tablespoons of olive oil. Stir in lemon zest and lemon juice and season with salt.

Rinse the bell pepper, cut in half, trim and cut into small cubes.

Rinse the zucchini, trim and cut lengthwise into thin slices. Grill in an oiled grill pan on both sides for 2-3 minutes. Season with salt and pepper, remove from the pan and arrange on plates. Drizzle the herb dressing over the zucchini and top each serving with a goat cheese slice and some diced bell pepper.
