4 large, waxy potatoes
1 handful baby Arugula
1 shallot
3 Tbsps olive oil
1 Tbsp lemon juice
3 Tbsps white balsamic vinegar
½ tsp medium hot Mustard
½ tsp honey
salt
freshly ground peppers
2 Tbsps Pumpkin seed oil

Preparation steps

Scrub potatoes and steam for about 30 minutes in a closed steamer pan.

Rinse and shake dry arugula. Peel and halve shallot. Dice some finely and the rest coarsely. Whisk olive oil with lemon juice, vinegar, mustard and honey, add diced shallots and season with salt and pepper.

Cool potatoes until lukewarm and peel, cut into 1.5 cm (approximately 1/2 inch) thick slices. Arrange large potato slice on a plate and drizzle with a little vinaigrette. Arrange few arugula leaves on it. Stack remaining potato slices and arugula like tower and drizzle with vinaigrette often. Drizzle with remaining vinaigrette and pumpkin seed oil. Serve.
