- 4 cups new potatoes
- 2 onions
- 2 Tomatoes
- ½ cup butter (melted, plus 2 tbsp extra)
- Fleur de sel
- freshly ground peppers
- 2 Tbsps Thyme flower

Preparation steps
1.
Slice the potatoes, onions, and tomatoes on a mandolin.
2.
Spread the slices on an oven tray. Brush with melted butter and sprinkle with the sea salt, pepper and thyme flowers.
3.
Preheat the oven to 180°C | 350F | gas 4.

Line an oven tray with greaseproof paper. Place 4, metal ring moulds (6-7cm in diameter) on top.
5.
Place 5 or 6 potato discs, in a flower shape, inside each mould. Add 3 onion slices and 1 tomato slice. Repeat. Finish with a layer of potato. Reserve the remaining onion slices.
6.
Cover the moulds with greaseproof paper and bake in the middle of the oven for 20 minutes. Remove the paper, then carefully remove the moulds. Return to the oven and cook the layers for another 5-7 minutes.
7.
Meanwhile, fry the onion slices in a pan with 2 tbsp foaming butter.
8.
Serve the layers straight from oven to plate, topped with the onion.
