Preparation steps

1.

Peel and finely dice the onions. Peel and quarter the apples. Remove the core, and finely dice. Heat the oil in a saucepan, add the onions and apples, and sweat briefly. 

2.

Add the honey, then deglaze with the beer. Stir in the mustard and simmer for 30 minutes until thickened. Puree the marinade, and season to taste with vinegar, salt, and pepper. Cool the marinade completely.
