Ingredients

For the macaroons
4 egg whites
1 pinch salt
250 grams sugar
1 Tbsp lemon juice
200 grams ground almonds
50 grams Coconut flakes
3 drops Almond extract
For decorating
100 grams Mocha flavored chocolate

Preparation steps

1.

Beat the egg whites with a pinch of salt until soft peaks form. Add the sugar and lemon juice and continue beating until for about 10-15 minutes, until stiff and glossy. Fold in the ground almonds, coconut flakes and almond extract.

Transfer the mixture to a piping bag affixed with a large, round tip and pipe 7 cm (approximately 3 inch) long rods onto a baking sheet lined with parchment paper. Bake in an oven preheated to 150°C (approximately 300°F) for 20 minutes. Remove from the oven and let cool.

Coarsely chop the mocha flavored chocolate and melt in a double boiler or heatproof bowl over a saucepan of simmering water. Transfer the melted chocolate to a freezer bag, snip the corner tip off and pipe the chocolate onto the cooled cookies. Allow the chocolate to harden and serve.
