Ingredients

1 Small bowl, 1 Wok, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Peeler, 1 Slotted spatula, 1 Citrus juicer, 1 Fine grater

Preparation steps

1.
Heat the oven to 150°C (130° fan) 300°F gas 2. Line a large baking tray with non-stick baking paper.

Mix the almonds with half the sugar.
3.
Whisk the egg whites with the remaining sugar until very stiff and glossy.
4.
Carefully fold the almond mixture into the egg whites and spoon into a piping bag with a plain nozzle.
5.
Pipe 40-45 small heaps of the mixture (about 1cm|0.5") onto the baking tray. Dust with icing sugar and bake for 15 minutes. Switch off the oven and let the macaroons cool in the oven.
6.
For the filling: melt the chocolate in a heatproof bowl over a pan of simmering (not boiling) water. Remove from the heat and allow to cool.
7.
Warm the cream slightly and dissolve the instant coffee in it. Allow to cool and then whisk until stiff.
8.
Fold the coffee cream into the cold melted chocolate.
9.
Spread the chocolate filling onto half of the macaroons, top with the remaining halves, press lightly and serve dusted with icing sugar.
