Preparation steps

Beat the egg whites until soft peaks form. Add the sugar and continue beating until stiff and glossy. Stir in the ground almonds and cornstarch and transfer to a piping bag affixed with a large, round tip. Pipe small mounds of the mixture onto a baking sheet lined with parchment paper. Sprinkle with the sliced almonds. Bake in an oven preheated to 160° (approximately 325°F) for 30 minutes, until golden brown. Turn the oven off, crack the door and allow the cookies to cool in the oven.

Drizzle the cooled cookies with melted chocolate, if desired.
