Ingredients

For the scrambled eggs and bacon
4 large eggs
2 Tbsps butter
salt
peppers
8 smoked Bacon
For the Blinis
½ cup Buckwheat flour
½ cup plain flour
½ tsp Baking powder
½ tsp Dried yeast
¾ cup warm milk
1 egg
2 Tbsps butter
In addition
flat-leaf parsley (to garnish)

Preparation steps

1.
For the blinis: Sift the two flours together with the baking powder.
2.
Mix the milk with the yeast, then separate the egg keeping the white for later, and add the yolk to the milk and yeast. Blend well.
3.
Make a well in flour and gradually pour in the in the wet ingredients and blend into a smooth batter, taking care to smooth out any lumps. Cover with a tea towel and levee to stand for 1-2 hours.

Whisk the egg white until it forms stiff peaks then fold this into the batter gently to keep as much volume as possible.

In a large frying pan melt the butter and lightly grease the pan, pouring off any excess and keeping it for re-greasing the pan. Turn the heat up high.

Take a tablespoon and drop spoonfuls of the batter into small rounds to make the blinis. Cook for 40 seconds then flip over and cook for another 30 seconds. Once cooked keep in a warm place ready for serving.

Preheat the grill and grill the bacon for 6-8 minutes until its crispy. Cut into small pieces and keep warm.

Break the eggs into a jug and mix together with a whisk. Season with salt and pepper.

Place a medium saucepan over a medium heat, do not let it get too hot. Add half the butter into the pan and swirl it around the saucepan. When the butter is melted pour in the eggs.

With a wooden spoon (preferably one with a point) stir briskly forwards and backwards making sure that the bottom doesn't stick. Add in the rest of the butter and stir through.
11.
When the eggs are 3/4 cooked through stir through the sweetcorn and then remove from the heat. (The eggs will continue to cook off the heat).
12.
Continue to stir when the eggs are off the heat until all remaining liquid egg has been cooked through. Spoon the scrambled eggs between the blinis and top with the bacon. Garnish with flat leaf parsley and serve.
