1 cup Red onions (diced)
1 medium, red Bell pepper (seeded and diced)
¼ tsp Chili flakes
salt (to taste)
freshly ground Black pepper (to taste)
4 large eggs
4 large egg whites
0.333 cup Pepper Jack Cheese (shredded)
4 Whole-wheat Tortillas (10-inch)
4 Tbsps Tomato salsa (jarred)
4 Tbsps Sour cream (low-fat)
1 large Tomato (seeded and diced)
1 small Avocado (diced)
4 large Lettuce

Preparation steps

Heat oil in a large skillet over medium-high heat. Saute onions, peppers and chili flakes until onions and peppers are softened, about 6 to 8 minutes. Season lightly with salt and pepper and transfer to a dish.

In a mixing bowl, whisk eggs and egg whites together. Stir in the cheese. Coat skillet with nonstick cooking spray and heat over medium heat. Pour in the egg mixture, reduce heat and scramble until eggs are cooked through, about 3 to 5 minutes.

Spread 1 tablespoon of sour cream and salsa on each tortilla. Divide onions, peppers, egg mixture, diced tomatoes, avocado and lettuce leaves between the tortillas.
4.
Roll up; cut in half and serve.
