12 small new Potato
2 Tbsps olive oil

1.333 cups smoked Salmon (you could use trimmings)
2 shallots (finely chopped)
12 Pineapple (finely chopped)
½ bunch Chervil (finely chopped)
2 Tbsps extra-virgin olive oil

Preparation steps

Preheat the oven to 200°C (180° fan) | 400F | gas 6

Rub the potatoes all over and sprinkle with salt and bake in the oven for about 30-40 minutes until cooked all the way through.

Meanwhile finely dice the salmon, and mix with the shallots, tomatoes, chervil and extra virgin olive oil. Check the seasoning and add carefully if required.
4.
When the potatoes are cooked, cut in half and carefully scoop out a tsp of potato. Pile the salmon mix into the hollows and serve.
