- For the blinis
- ¼ cup Buckwheat flour
- ¾ cup Bread flour
- 1 ½ tsps Dried yeast
- ⅔ cup Crème fraiche
- ¾ cup 2% milk
- 2 medium eggs
- 2 Tbsps butter
- 1 tsp salt
- For the garnish
- 1 ⅓ cups Crème fraiche
- freshly ground Black pepper
- Chervil (picked)
- 2 cups Salmon fillet (cut into 1 inch squares)
- Red currant (to garnish)

Preparation steps
1.
Prepare the blini batter by sifting together the flours, salt and baking powder into a large mixing bowl.

Sprinkle the yeast on top, then combine the crème fraiche and milk in a saucepan and heat together gently very gently. Remove from the heat and whisk in the egg yolks until smooth.

Pour on top of the flour mixture and whisk until smooth and set to one side. Melt the butter in a saucepan and transfer to a cup.

Brush a blini pan using kitchen paper dipping in the melted butter and heat over a medium heat until hot.

Spoon a tablespoon of the batter into the pan and cook the blinis for barely 1 minute until set, then flip and cook the other side for 30 seconds. Transfer to a wire rack and leave to cool to one side.
6.
Repeat the process to cook the blinis, remembering to brush the pan with a little melted butter between blinis.
7.
When ready to serve, arrange the chervil leaves on top of the blinis and top with a dollop of crème fraiche. Sit squares of the cured salmon fillet on top and garnish them with a redcurrant before serving.
