½ bunch cilantro
1 chili pepper
1 tsp fresh ginger (freshly grated)
1 garlic clove
1 egg
breadcrumbs
soy sauce
cayenne pepper
olive oil
8 sprigs Lemongrass

Preparation steps

1.

Rinse cilantro, shake dry and pluck leaves. Keep some for garnish and finely chop the rest.

Rinse chile pepper, halve lengthwise, remove seeds and finely chop.

Peel garlic and finely chop.

Mix ground meat with chopped cilantro, chile pepper, ginger, garlic and egg. Combine with breadcrumbs to form a malleable dough. Season with soy sauce and cayenne pepper. Shape into small balls, skewer with lemongrass stalks and brush with olive oil. Cook on grill or fry 5-6 minutes while turning. Garnish with remaining cilantro and serve.
