12 fresh, small Artichoke

5 Tbsps lemon juice (freshly squeezed)
10 Tbsps extra virgin olive oil
3 Tbsps parsley (coarsely chopped)
1 carrot
1 white onion
1 garlic clove

Preparation steps

1.

Remove the hard outer leaves of the artichokes, then remove the tips and stems. Cut the artichokes lengthwise into quarters and place in a large pot with  boiling salted water. Cook the artichokes for 15-20 minutes, then remove and drain well.

2.

Peel and thinly slice the onions and carrots. Peel and finely chop the garlic. Mix the oil, lemon juice, onion, garlic, carrot, parsley, salt and pepper. Mix the marinade into the artichokes and set aside for 15 minutes. Stir, and serve with fresh white bread.
