- 1 kilogram Artichoke
- 1 lemon (juiced and zested)
- 150 milliliters Wine vinegar
- 1 Tbsp salt
- 1 Tbsp sugar
- 1 tsp peppercorns
- 1 bay leaf
- 2 Tbsps freshly chopped Fresh herbs (such as oregano, rosemary, or thyme)
- 400 milliliters olive oil

Preparation steps
1.
Trim the artichokes, and remove the tough outer leaves and leaf tips. If necessary, remove the choke. Remove the stalk, and immediately place in the lemon juice.
2.
Bring the vinegar, 300 ml (approximately 10 ounces) of water, the salt, pepper, and bay leaf to a boil. Add the artichokes, and cook for 25 minutes.
3.
Remove from the cooking liquid and let cool. Mix with the herbs, and divide into jars. Pour the oil over so that everything is well covered. Seal tightly.
