Preparation steps

1.

Trim the Jerusalem artichokes, peel, rinse, pat dry and cut into 4-5 mm (approximately 18-1/4 inch) thick slices. Peel the ginger and cut into sticks. Bring the vinegar, salt, sugar and 375 ml (approximately 1 1/3 cups) of water to a boil. Add the Jerusalem artichokes and ginger and simmer for about 10 minutes until tender.

2.

Remove the vegetables with a slotted spoon and put into prepared jars.

3.

Bring the liquid to a boil and then cover the Jerusalem artichokes in the jars. Close securely and cool completely. Serve with thick slices of hearty bread.

To preserve the artichokes for longer, you will need to process the jars according to manufacturer's instructions, or visit http://nchfp.uga.edu/.
