Preparation steps

1.

Rinse the tomatoes, remove the core, and coarsely chop. Drain the sun-dried tomatoes, reserving the oil. Peel the onion and garlic. Finely dice the onion, and thinly slice the garlic. Rinse and halve the pepper. Remove the seeds and finely dice. Add the allspice, bay leaf, clove, and cinnamon to a piece of cheesecloth or a spice bag and seal with kitchen twine.

2.

Heat 2 tablespoons of the tomato oil in a pan. Sweat the onion, garlic, and peppers briefly. Add the tomatoes and sun-dried tomatoes. Add the spice bag and simmer for 15 minutes. Mix in the sugar, mustard powder, and vinegar. Simmer for 15-20 minutes until thickened. Remove the spice bag, and pass the ketchup through a fine strainer into a bowl. Bring to a boil, season with salt, and cayenne pepper, and pour into clean bottles. Seal tightly and cool completely.
