- 1 onion
- 2 garlic cloves
- 1 red Bell pepper
- 2 Tbsps olive oil
- 4 allspice
- 1 bay leaf
- 1 cloves
- 2 sprigs parsley
- 1 sprig Lovage
- 4 Tbsps brown sugar
- 1 tsp mustard powder
- 100 milliliters Wine vinegar
- salt
- cayenne pepper

Preparation steps

Rinse the tomatoes, remove the core, and coarsely chop. Peel and finely dice the onion and garlic. Rinse and halve the pepper. Remove the seeds and finely dice.

Heat the oil in a pan, and sauté the onion, garlic, and peppers. Add the allspice, bay leaf, and the clove. Sauté briefly, then add the tomato. Simmer the mixture for 15 minutes. Mix in the vinegar, herbs, sugar, and mustard powder. Simmer another 10-15 minutes, until thickened. Pass the mixture through a fine strainer, then return to a boil. Season to taste with salt and cayenne pepper. Pour the ketchup into the prepared bottle, seal tightly, and cool completely.
