- 1 onion
- 3 garlic cloves
- 2 Red Bell pepper
- 2 Tbsps olive oil
- 4 allspice
- 2 bay leaves
- 2 cloves
- 3 sprigs parsley
- 1 sprig Lovage
- 8 Tbsps brown sugar
- 1 tsp mustard powder
- 200 milliliters Wine vinegar
- salt
- cayenne pepper

Preparation steps

Rinse the tomatoes, remove the core, and finely dice. Peel and finely dice the onion and garlic. Rinse and halve the peppers. Remove the seeds and finely dice.

Heat the oil in a pan, and sauté the onions, garlic, and peppers. Mix in the allspice, bay leaves, and cloves. Sauté briefly, then add the tomatoes and simmer for 15 minutes. Mix in the herbs, sugar, mustard powder, and vinegar. Simmer another 10-15 minutes until thickened. Pass through a fine strainer, return to a boil, then season to taste with salt and cayenne pepper. Pour the ketchup into prepared bottles, seal tightly, and cool completely.
