Rinse the tomatoes, remove the cores, and chop. Peel the onion and garlic, and chop as well. Rinse and halve the peppers, remove the seeds, and dice.
Sauté the onion, garlic, and peppers in the oil. Add the allspice, bay leaves, and cloves. Sauté briefly, then add the tomato. Simmer for 15 minutes. Add the herbs, sugar, mustard powder, and vinegar. Simmer 10-15 minutes until thickened. Pass through a strainer, and bring to a boil again. Season to taste with salt and pepper. Transfer to the prepared bottles, seal tightly, and cool completely.
