Rinse the tomatoes, remove the stalks and cut the flesh into cubes. Peel and dice the onion and garlic. Rinse the pepper, halve, remove the ribs and dice.
Saute the onion, garlic and pepper in hot oil. Season with all spice, bay leaves and cloves. Add the tomato and briefly saute. Simmer for about 15 minutes. Add the herbs, sugar, mustard powder and vinegar. Let simmer for 10-15 minutes until creamy. Pour the mixture through a sieve and boil again. Season with salt and cayenne pepper. Pour the ketchup into a bottle, seal well and let cool before serving.
