- 8 white Bread (crusts removed)
- vegetable spread
- 2 cooked carrots (thinly sliced lengthways)
- ½ Cucumber (thinly sliced lengthways)
- 8 ozs firm Tofu (diced)
- Cress
- Sesame seeds
- To garnish
- Mizuna
Preparation steps
1.
Flatten each bread slice with a rolling pin and spread both sides lightly with the vegetable spread.
2.
Put the carrots, cucumber, tofu and salad cress at the end of each slice, leaving a margin around the edges and roll up tightly.
3.
Roll in sesame seeds, pressing them in lightly.
4.
Wrap tightly in plastic wrap and chill for at least 20 minutes before serving. Garnish with mizuna.
