Ingredients

- For the rice
- 3 cups cooked Sushi rice
- ⅔ cup Japanese Rice vinegar (mirin)
- 3 tablespoons superfine caster sugar
- 1 teaspoon salt
- In addition
- Kiwi (sliced)
- Strawberries (sliced)
- Melon (sliced)
- Oranges (sliced)
- Shredded coconut (to garnish)
Preparation steps
1.
Rinse the rice in a sieve under cold running water. Leave to dry for 30 minutes spread out on a plate.

Place in a pan with 1 l water and bring to the boil. Reduce the heat, cover with a lid and cook for 15 minutes. Remove from the heat and leave to stand for 5 minutes.
3.
Meanwhile, heat the vinegar, sugar and salt in a small pan until the sugar and salt have dissolved.
4.
Spoon the rice onto a baking sheet and spread across the tray in a thin even layer. Pour the dressing over and fold in until all the grains are coated and glossy.
5.
Allow to cool then form into thin fingers of rice, using your hands.
6.
Top with slices of fruit and serve with a sprinkle of desiccated coconut.
