For the dough
300 grams Pastry flour
1 egg
1 egg yolk
1 packet Dry yeast
100 grams sugar
80 milliliters milk
100 grams Currants
1 piece candied Orange peel
Ground cinnamon
ground ginger

1 egg white
1 tablespoon lemon juice

Preparation steps

For the dough: Mine candied orange peel and dice butter. Put flour in a bowl and create a well. Add yeast, orange peel, 1-2 pinches of cinnamon and ginger, a pinch of salt, 1 egg and butter. Knead into crumbs, then knead in lukewarm milk. Shape dough into a ball and let stand in a warm place for 45 minutes. Knead dough well and allow to rise for another 45 minutes.

Preheat the oven to 180°C (approximately 350°F).

Divide dough in half, shape into rolls and cut each roll into 10 slices. Roll each slice into a small disc on a surface dusted with flour. Add a currant to each disc and form a dough ball around currant. Cut a cross into the top of each roll and place on a baking sheet greased with butter. Mix egg yolk with 1 tablespoon warm water and brush buns with mixture. Bake until golden brown, about 25 minutes. Cool on a wire rack. Combine sugar, egg white and lemon juice to create icing. Beat until thick. Brush icing on cooled buns and serve.
