500 grams white Asparagus
50 grams green Asparagus
150 grams cooked ham
150 grams Butter cheese (or mozzarella)
1 small onion
1 Tbsp butter
100 milliliters white wine
200 grams Whipped cream
1 tsp cornstarch
salt
freshly ground peppers
Nutmeg
1 cup Vegetable broth

Preparation steps

Peel and rinse white asparagus and trim the ends. Rinse green asparagus and peel lower thirds. Cut stalks into pieces. Cook white asparagus in boiling salted water for about 5 minutes, add green asparagus and cook for about 5 minutes more. Drain, rinse in cold water and drain again.

Cut ham into strips. Grate cheese. Peel onion and chop finely. Heat butter in a saucepan, saute onion until soft. Add white wine and simmer briefly. Add vegetable broth and cream and simmer on low heat for about 3 minutes. Mix cornstarch with 1 tablespoon of cold water, add to mixture and cook for 1 minute. Season with salt, pepper and nutmeg. Place asparagus in a baking dish, spread with ham and pour sauce. Sprinkle with cheese and bake in preheated oven at 220°C (approximately 425°F) for about 15-20 minutes. Remove from oven and serve.
