- For the cupcakes
- 1 cup all-purpose flour
- ½ cup light brown sugar
- ¼ tsp baking soda
- ¾ tsp Baking powder
- 1 pinch salt
- ½ tsp ground cinnamon
- ¼ cup chopped Walnut
- 2 eggs
- ⅜ cup sunflower oil
- ½ tsp vanilla extract
- 1 cup grated carrots
- 1 small Apple (peeled and grated)
- For the topping
- ¼ cup low-fat spread
- 1 Tbsp powdered sugar
- ½ cup low-fat cream cheese
- To decorate
- Marzipan carrots (optional)
Preparation steps

For the cupcakes: heat the oven to 180°C (160° fan) 350°F gas 4. Place paper cases in 6 bun tins.

Stir together the flour, sugar, bicarbonate of soda, baking powder, salt and cinnamon in a mixing bowl. Stir in the nuts.

Whisk together the eggs, oil and vanilla. Fold into the dry ingredients with the grated carrot and apple, stirring until just combined.

Spoon into the paper cases and bake for 20-25 minutes, until golden. Cool in the tins for 5 minutes, then place on a wire rack to cool completely.

For the topping: Beat together the low fat spread and icing sugar until well combined, then beat in the cream cheese until smooth.

Spoon a little topping on each cake and top with a marzipan carrot, if using.
