6 Tbsps olive oil
4 cups vegetable stock
2 bay leaves
1 sprig Sage
2 sprigs thyme
18 garlic cloves (10 roughly chopped, rest set aside)
4 slices Bread (cut into strips)
2 Tbsps Chives

Preparation steps

1.
Fry the onion in 2 tbsp hot oil. Add the stock, bay leaves, sage and thyme. Season with salt and ground black pepper and bring to the boil. Add the garlic and simmer on a low heat for around 15-20 min.

Fry the bread in the remaining oil until golden. Add the leftover garlic then pat dry on kitchen paper and season with salt.
3.
Remove the herbs from the soup, season with salt and ground black pepper and garnish with the fried garlic cloves and the chives. Serve with the fried bread.
