1 bunch Arugula
1 handful lamb's lettuce
1 sm head Radicchio
4 Tbsps scallions
½ bunch Basil
2 Tbsps balsamic vinegar
½ tsp hot Mustard
4 Tbsps olive oil
2 slices Toast (crusts removed)
1 Tbsp butter

1 pinch sugar

Preparation steps

Rinse and trim the lettuces and cut into bite-sized pieces. Drain well and arrange all the salad ingredients on plates. Distribute the basil leaves and chives on top.

For the dressing, combine the balsamic vinegar, the mustard, a pinch of sugar and the oil. Mix well and season with salt.

3.

For the croutons, cut the toast into small cubes and fry until golden brown in some butter, while stirring.

Drizzle the salad with the dressing and serve showered with the croutons.
