Preparation steps

1.
Peel the cucumber and cut it lengthways into quarters, then cut it across into thin slices.
2.
Use a sharp knife to slice the peel away from the orange, then cut out each individual segment.
3.
Halve the grapes and slice the strawberries, then mix them together with the orange and cucumber in a bowl.
4.
Thin the honey in the lime juice and pour it over the salad, then tuck in the mint sprigs and leave to marinate for 30 minutes before serving.
