Preparation steps

1.

Cook the lentils in a pot of boiling salted water until tender, about 5 minutes. Drain and allow to cool.

Peel the onions and cut into thin rings. Rinse the lettuce, tear into bite-size pieces and spin dry. Rinse the cherries and remove the pits.

3.

In a bowl, stir the lentils with the onions, lettuce and cherries. In a bowl, whisk the vinegar with the walnut oil. Season with the salt, pepper and sugar to taste. Serve the salad drizzled with the vinaigrette.
