2 cups yellow Lentils

1 onion (diced)
Ghee (for frying)
1 handful cilantro (finely chopped)
1 green chili pepper (finely chopped)
1 tsp Garam Masala
1 tsp lemon juice
For the chutney
1 clove garlic cloves
1 green chili pepper
2 handfuls cilantro (leaves torn off)
1 ⅔ cups mint (leaves torn off)
½ tsp tamarind extract
1 tsp brown sugar

Preparation steps

1.
Rinse the lentils and soak overnight in a large bowl of cold water.
2.
For the chutney: Purée together all the ingredients with 4 - 5 tbsp cold water and season to taste with salt. Cover and chill for 2 hours in the fridge.
3.
For the lentil rings: Drain the lentils (retaining the water) and mix with the baking powder and 4 - 5 tbsp of the soaking water. Purée well in a blender or food processor.

Fry the onion in 1 tbsp hot ghee for a few minutes and then remove from the heat.

Stir the coriander, chilli, onion and garam masala into the lentils and season to taste with salt and lemon juice. Shape the mixture into small balls, press flat and push a hole out of the middle.
6.
Fry the rings in the hot ghee for 8 - 10 minutes each until golden brown. Turn half way through and drain on kitchen paper.
7.
Serve the rings with pots of the mint chutney on the side.
