- Tartar sauce
- 1 shallot (finely chopped)
- 4 Tbsps Mayonnaise
- 1 Tbsp Caper (finely chopped)
- 1 hard-boiled egg (diced)
- 2 baby gherkins (diced)
- 1 tsp Mustard
- 1 Tbsp Chives
- For the fish and the coating
- 2 ⅔ cups Cod (cut into bite-size pieces)
- 2 eggs
- 3 Tbsps flour
- 1 cup breadcrumbs
- Fat (for frying)

Preparation steps
1.
To make the tartar sauce mix the shallot with the mayonnaise and add the capers, egg and gherkins.
2.
Season with salt, ground black pepper and mustard and stir in the chives. Fill the tartar sauce into small dipping dishes.
3.
Season the fish with salt and ground black pepper.
4.
Beat the eggs in a bowl. Place the flour and the breadcrumbs on two separate plates. Dunk the pieces of fish in the flour, then in the egg and finally in the breadcrumbs. Stick the coating on well.
5.
Heat the fat to 170°C/335°F and fry the goujons a few at a time for approx. 2 minutes.
6.
Remove from the fat with a draining spoon and let dry on kitchen paper. Serve immediately.
