150 grams smoked Pancetta (sliced)
4 Tbsps olive oil
2 Tbsps White vinegar
salt
freshly ground peppers
Fresh herbs (for garnish)

Preparation steps

1.

Rinse and dry the lettuce, then separate the leaves. Rinse and quarter the apples. Remove the core and thinly slice. Drizzle immediately with lemon juice.

Peel and finely chop the onion. Cut the pancetta into strips, and cook in a dry pan. Add the onion, and sauté both for 2-3 minutes.

Mix the olive oil with the vinegar, and season to taste with salt and pepper. Arrange the lettuce on plates, and top with the slices of apple. Sprinkle with the onion and pancetta mixture, then drizzle with the vinaigrette. Garnish with the fresh herbs.
